I generally have the following in my cabinets/fridge/freezer at all times:

black beans (canned)
cannellini beans (canned)
chili beans (Bush's medium hot are our favorites)
chick peas (canned)
red lentils
green (French) lentils
brown lentils
split peas
quick-cook barley
cous cous
basmati rice (mr. flea will not eat brown rice)
arborio (risotto) rice
variety of dried pastas (we like Barilla for the balance of taste and budget), both long & skinny and short & chunky; also, tortellini

canned olives (for the children)
canned tomatoes (small cans of diced, large cans of whole peeled)
frozen peas
frozen corn
frozen spinach
yellow onions
potatoes (usually at least two of the following: red, yellow, baking, and sweet)
carrots

cheddar cheese
feta cheese
parmesan cheese (okay, we buy the cheap stuff in the can)
eggs

Most of these keep for at least as long as it takes us to use them. With the purchase of fresh vegetables and occasionally meat (we don't eat much meat at home, maybe 2-3 times a week), we can cook nearly everything in our repertoire.

chicken (frozen breasts)
bacon
hot dogs (usually in the freezer--I don't go through a whole package before they go bad)
cheese (usually two or three kinds on hand)
crackers
bread (in freezer)

onions (white or yellow--whatever's cheaper when I'm buying)
frozen peas
beans (dried)
chicken stock

low sodium chicken and beef broth (cartons and cans)
canned soup (tomato and other assorted, for weekday lunches when I don't have yogurt)
canned tomatoes (small cans of diced, large cans of whole peeled) plus tomato paste and sauce
cranberry sauce
canned beans (Boston baked or similar flavor)
canned pineapple chunks
Parmelat whole milk

dried pasta (Barilla or Ronzoni, depending on what's on sale), both long & skinny and ziti/penne (lately my favorite is Barilla's Linguine Fini), tortellini for throwing in soup
egg noodles, both wide and thin
ramen noodles
rice, jasmine, minute, and/or boiling bags
oatmeal, pinhead, quick, and instant

yellow onions (Vidalia when I can get 'em)
potatoes
carrots
shredded cheese, cheddar and mozzarella
parmesan cheese (I buy the cheap stuff, too, because the preservatives in it keep it from going moldy on me.)
pasteurized egg product (because I don't eat eggs, and the cartons let me measure out a half an egg when I don't feel like making enough pancakes for an army)
pickles
hot dogs (in the freezer)
bread, usually oatmeal (in freezer)
flavored yogurt (for weekday lunches)
skim milk, the expensive kind that tastes like 2%
half and half, both fat-free (for most applications) and regular (to augment the fat free in coffee, because all fat-free just doesn't cut it)
orange juice
